egg whites

1/4

cup firmly packed light brown sugar

tsp. vanilla

1/4

tsp. ground cinnamon

pkg. (6 oz.) PLANTERS Trail Mix Nut & Chocolate Mix

Make It

PREHEAT oven to 250°F. Place egg whites in small bowl. Gradually add sugar, beating with electric mixer on high speed until stiff peaks form. (Do not underbeat.) Blend in vanilla and cinnamon. Gently stir in trail mix.

DROP tablespoonfuls of the egg white mixture onto parchment paper-covered baking sheets.

BAKE 35 to 40 min. or until cookies are dry on the outside. Remove to wire racks; cool completely. Store in tightly covered container at room temperature.

The taste was really great; I made some with just M&M's, some with only raisins, and some plain ones. Out of about 35, only 4 or 5 hardened to the proper consistency (But those were great!) I'm not sure why they stayed sticky, I think cooking longer would help. The plain ones tasted good but were the stickiest of all.

I had never made a merinque except for pies and I know a woman who makes great ones, so I thought I'd give this a try. I had a really hard time getting them off the parchment paper and ruined most of them. I think I would like them better with just a few nuts instead of the trail mix and since watching your merinque video I would leave them in the oven to dry out better before trying to separate from the paper. The color of the merinque with the brown sugar was beautiful.
