  • Combine sour cream, mustard and lemon juice in small bowl. Gradually add oil, stirring until well blended. Stir in dill; cover.
  • Refrigerate at least 1 hour before serving.
  • Arrange salad greens on serving platter; top with salmon. Serve with the sour cream dressing.

How to Poach Salmon

Add fish to gently simmering liquid; cover tightly. Cook 3 min.; turn fish over. Cook, covered, an additional 4 to 6 min. or until fish flakes easily with fork.


Substitute 1 tsp. dried dill weed for the 1 Tbsp. chopped fresh dill.

    Try adding a couple of tablespoons of mayo and sugar to sweeten this up a bit, otherwise the sour cream is a bit overwhelming

    I enjoy this dish when I a) grill the salmon on an indoor grill and b) do not need the sour cream. Also, I like to make up a mixture of the mustard with lots of dill as well as dill seeds, oil, and a little bit of salt. There are never any leftovers when I make this meal and your suggestion of the greens makes it just perfect!
