  • Combine sour cream, mustard and lemon juice in small bowl. Gradually add oil, stirring until well blended. Stir in dill; cover.
  • Refrigerate at least 1 hour before serving.
  • Arrange salad greens on serving platter; top with salmon. Serve with the sour cream dressing.

How to Poach Salmon

Add fish to gently simmering liquid; cover tightly. Cook 3 min.; turn fish over. Cook, covered, an additional 4 to 6 min. or until fish flakes easily with fork.

Substitute

Substitute 1 tsp. dried dill weed for the 1 Tbsp. chopped fresh dill.

I enjoy this dish when I a) grill the salmon on an indoor grill and b) do not need the sour cream. Also, I like to make up a mixture of the mustard with lots of dill as well as dill seeds, oil, and a little bit of salt. There are never any leftovers when I make this meal and your suggestion of the greens makes it just perfect!

So-So --- needed more taste to it other than the mustard which I thought was over-whelming --- less mustard and more sour cream mixed with onion or tarragon would be good --- that would be only way I would make it again.

Rated 3 out of 5 by from Quite simple to make and tastes good. Quite simple to make and tastes good. I'd use a little less lemon juice than in the recipe, though; it's quite tart. Maybe 1/2 or 3/4 tbsp instead of 1 tbsp.
