Poached salmon is served over mixed greens with a sour cream dressing flavored with mustard, lemon and dill for a delicious entree.

what you need

1/4
cup  BREAKSTONE'S or KNUDSEN Sour Cream
1
Tbsp.  GREY POUPON Dijon Mustard
1
Tbsp.  fresh lemon juice
2
Tbsp.  oil
1
Tbsp.  chopped fresh dill
1
bag  (10 oz.) mixed salad greens (about 8 cups)
1
 salmon fillet (14 oz.), poached, flaked

Make It

COMBINE sour cream, mustard and lemon juice in small bowl. Gradually add oil, stirring until well blended. Stir in dill; cover.

REFRIGERATE at least 1 hour before serving.

ARRANGE salad greens on serving platter; top with salmon. Serve with the sour cream dressing.

How to Poach Salmon
Add fish to gently simmering liquid; cover tightly. Cook 3 min.; turn fish over. Cook, covered, an additional 4 to 6 min. or until fish flakes easily with fork.
Substitute
Substitute 1 tsp. dried dill weed for the 1 Tbsp. chopped fresh dill.
