  • Preheat oven to 400°F. Combine mushrooms, carrots, red peppers and cheese. Pull away the skin from each drumstick to form a pocket. Spoon the mushroom mixture evenly into pockets. Secure with toothpicks.
  • Coat chicken with coating mix as directed on package. Place in single layer on foil-covered baking sheet.
  • Bake 40 minutes or until chicken is cooked through. Remove and discard toothpicks.

Serving Suggestion

Serve with hot cooked rice, a mixed green salad and fresh fruit for dessert.

I used split chicken breasts instead of the drumsticks because it seemed easier to work with, I added one clove garlic, 2 TBS minced onion and left out the carrot and red pepper. This was a great recipe and can be altered in so many ways according to your taste!
