PREHEAT oven to 400°F. Combine mushrooms, carrots, red peppers and cheese. Pull away the skin from each drumstick to form a pocket. Spoon the mushroom mixture evenly into pockets. Secure with toothpicks.
COAT chicken with coating mix as directed on package. Place in single layer on foil-covered baking sheet.
BAKE 40 minutes or until chicken is cooked through. Remove and discard toothpicks.
