  • Preheat oven to 400°F. Combine mushrooms, carrots, red peppers and cheese. Pull away the skin from each drumstick to form a pocket. Spoon the mushroom mixture evenly into pockets. Secure with toothpicks.
  • Coat chicken with coating mix as directed on package. Place in single layer on foil-covered baking sheet.
  • Bake 40 minutes or until chicken is cooked through. Remove and discard toothpicks.

Serving Suggestion

Serve with hot cooked rice, a mixed green salad and fresh fruit for dessert.

    I would make this again using thighs. Drumsticks are very hard to stuff

    Instead of carrots try brocolli or other favoriate veggies you like with cheese. My kids loved this dish.
