Polynesian Sunshine Pie

This is awesome!! I too am not a big fan of coconut but it is not overwhelming in this recipe at all. Lots of compliments on this recipe.

What You Need

can (15 oz.) DOLE Mandarin Oranges, divided

HONEY MAID Graham Pie Crust (6 oz.)

DOLE Banana, sliced, divided

oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened

tsp. vanilla

tub (8 oz.) COOL WHIP Whipped Topping, thawed

cup BAKER'S ANGEL FLAKE Coconut, toasted, divided

can (15.25 oz.) DOLE Tropical Fruit Salad, drained

cup apricot jam, melted

Make It

DRAIN oranges, reserving 2 Tbsp. of the syrup. Place half of the oranges on bottom of crust. Top with half of the banana slices; set aside.

BEAT cream cheese, reserved 2 Tbsp. syrup and vanilla in large bowl with wire whisk until well blended. Gently stir in whipped topping. Stir in 1/3 cup of the toasted coconut. Spread over fruit in crust. Refrigerate at least 1 hour.

ARRANGE tropical fruit salad and remaining banana slices in a ring around edge of pie just before serving. Mound remaining oranges in center. Drizzle jam over fruit. Sprinkle with remaining 1/3 cup coconut. Store leftover pie in refrigerator.

How to Melt Jam

Spoon jam into small microwaveable bowl. Microwave on HIGH 30 seconds or until melted.

How to Toast Coconut

Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!

This pie is so easy I have made it several times over the last few years. I actually got the recipe from the coupon section of my paper a few years back and it is starting to wear. Every time I make this pie it is a hit and it is really easy to make. I am not a big fan of coconut but really love it here.

A huge hit! It is very light...which was a hit after a filling Easter dinner! It seems to dissappear! And it is very easy to make!

I needed a dessert for a crowd so I tripled the recipe and it fit perfectly in a 9x13.I also substituted fresh diced mangos for the fruit salad. I think next time I would increase the amount of cream cheese. I guess I was looking for a little more of that that tang. I got lots of oooo's and aaaaah's from the party and an empty dish at the end. I will makes this again.
