Toasting coconut is easy. Just spread BAKER'S ANGEL FLAKE Coconut evenly in shallow baking pan. Bake at 350°F for 7 to 10 min. or until lightly browned, stirring frequently. Or, spread in microwaveable pie plate. Microwave on HIGH 3 min. or until lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
Place measured amount of cream cheese in microwaveable bowl. Microwave on HIGH 15 seconds or until slightly softened.
Spoon jam into small microwaveable bowl. Microwave on HIGH 30 seconds or until melted.

This is awesome!! I too am not a big fan of coconut but it is not overwhelming in this recipe at all. Lots of compliments on this recipe.
This pie is so easy I have made it several times over the last few years. I actually got the recipe from the coupon section of my paper a few years back and it is starting to wear. Every time I make this pie it is a hit and it is really easy to make. I am not a big fan of coconut but really love it here.
