Herbs de provence is a blend of spices found in the spice aisle of the grocery store. If not available, you can use a mixture of 1 tsp. dried thyme leaves, 1/2 tsp. dried basil leaves and 1/2 tsp. dried rosemary leaves instead.
Substitute chicken broth for the wine.
Prepare as directed, substituting 1 lb. boneless skinless chicken thighs for the pork shoulder and reducing the simmering time with tomatoes and wine to 45 min.

It's a new family favorite. I combined some of the steps from the Slow Cooker Pork Cassoulet with this one for a delicious balance. Left simmering for a bit too long so it was shredding, but noone minded.
Very good flavor. Not a quick week night dinner. Didn't have white wine used chicken broth instead also used panko bread crumbs. Recipe was fabulous!
