  • Preheat grill to medium-high. Place chops on greased grill.
  • Grill 12 to 15 min. or until cooked through (160°F), turning every 4 min. and brushing with 1/2 cup of the dressing. Meanwhile, mix corn, pepper, cucumber and remaining 1/4 cup dressing.
  • Serve chops topped with the corn mixture.

Serving Suggestion

Serve with steamed green beans and a whole grain roll.


Substitute 1 can (15 oz.) black beans, drained and rinsed, for the cucumbers.

    Awesome! Let me tell you that ever since I was pregnant with my son, I've had a severe aversion to pork and will NOT eat it no matter how it's prepared. I made this for a Playgroup BBQ for variety and had filet mignon as a backup. I tried a pork chop and LOVED it!!! I did marinate it for at least 5 hours in Italian Dressing before grilling & brushed more dressing while grilling. It was delicious and the relish made it so much more exciting. I think I might add some black beans & jalapeno to the relish next time just for a little twist!
