Hearty and flavorful as it is, this pork chop bake is easy to make too—made with a couple of cans of hominy, some chopped onions and peppers, and cheese.

What You Need

cans   (15.5 oz. each) hominy, undrained
1
 large onion, finely chopped
1
 jalapeño pepper, finely chopped

 bone-in pork chops (1-3/4 lb.), 1/2 inch thick
1
pkg.  (6 oz.) FRESH TAKE Southwest Three Cheese Recipe Cheese Breadcrumb Mix, mixed together
3
 radishes, thinly sliced
1
Tbsp.  chopped fresh cilantro

Make It

HEAT oven to 375ºF.

COMBINE hominy, onions and peppers in 13x9-inch baking dish.

TOP with chops; sprinkle with cheese mixture.

BAKE 35 min. or until chops are done (150ºF). Serve topped with radishes and cilantro.

For a milder onion flavor, cook the onions in nonstick skillet 5 min. or until tender before mixing with the hominy and peppers.
