  • Heat oven to 400ºF.
  • Sprinkle meat with black pepper. Heat oil in large ovenproof skillet on medium-high heat. Add meat; cook 2 to 4 min. on each side or until evenly browned on both sides. Transfer meat to plate.
  • Add onions, ginger and crushed pepper to skillet; cook and stir 3 to 5 min. or until onions are crisp-tender. Cook on medium-low heat 5 to 10 min. or until onions are softened and lightly browned; top with meat and any reserved meat juices. Spoon plums around meat.
  • Bake 15 to 20 min. or until meat is done (145ºF). Transfer meat to serving plate, reserving plums and onion mixture in skillet; cover meat to keep warm.
  • Add chicken broth, dressing and vinegar to skillet. Bring to boil, stirring constantly to scrape browned bits from bottom of skillet. Cook and stir on medium heat 5 min. or until liquid is slightly thickend. Remove from heat. Add butter; whisk until melted. Serve over meat.
