I changed this up a bit by using chicken instead of pork and dried cranberries instead of raisins. I also sprinkled feta cheese on top and used brown rice. Very good! nice mix of flavors.
I made this for family and guests last night and could not get over how wonderful it turned out! All the flavors just came together and everyone loved it! I did not have raisins, so I cut up some prunes and it was great!
We omitted the raisins and walnuts, added some more crushed red pepper, and thickened the sauce with another tablespoon of flour. It was delicious and very flavorful!
