I teach high school foods and nutrition. We were asked to cater an event. We made these croquettes as part of our menu. We had to multiply the recipe by 4. The first day we did steps 1 and 2. We put the mixture in the fridge over night. The next day we shaped and baked them. They turned out perfect! The recipe work perfectly even though we upsized it. It was the first item we ran out of first.
I refrigerated the potatoes and it made it easier to shape but they didn't come out golden brown and crispy and it definitely needs more salt. Blaaaaaand!
