  • Preheat oven to 350ºF.
  • Cut off the top 1/3 of a cooked potato and then make it into a boat by spooning out the insides, leaving a 1/4-inch thick shell. Place on a foil-lined baking sheet. Reserve centers for Mini Potato Puffs Recipe (see http://beingalison.com/potato-egg-bake-and-mini-potato-puffs).
  • Bake potato shells 1 hour or until soft. The first time I tried this recipe out it wasn't soft enough to really be able to eat easily. Learn from my mistake!
  • Take the potatoes shells out of the oven and add in 1 TBSP. of butter to the inside of each potato shell. Add ½ cup of cheese and ½ cup of chopped ham to each potato.
  • Crack egg into potato shell. Do the same for the second potato. Try not to let the yolk break apart.
  • Return potatoes to oven. Bake for 25-35 minutes or until the egg whites set.
