Rated 5 out of 5 by from I made a variation of this recipe this morning for breakfast. I made a variation of this recipe this morning for breakfast. I wrapped 2 small red potatoes in wax paper, & microwaved using my "baked potato" setting. I did not have the dressing, so I brushed the bottom of my non-stick pan lightly with butter. I left the skins on the potatoes, mashed down gently on a saucer using a bowl, and placed in pan. I added a little salt & pepper to the potatoes, I added a small slice of swiss cheese, & then added the Kraft cheddar cheese & the bacon. Delicious! Definitely a keeper.

Rated 5 out of 5 by from This was a hit with my husband and my kids. This was a hit with my husband and my kids. I always serve red potatoes with my BBQ Pork Roast; this recipe made them fun and different for a change. My kids enjoyed the smashing part and I enjoyed their help in the kitchen. They were yummy and the little bit of dressing gave them a nice lightly tangy boost from the usual. Definately will make them again soon!

I also used more italian dressing.(I just love the flavor!) I cooked the potatoes for 10 minutes and the middles weren't quite done. But all in all, they were yummy. My husband especially loved them! Nice to have something different than plain ol mashed potatoes

Rated 5 out of 5 by from So good, so easy, what more could you ask for! So good, so easy, what more could you ask for! I had large potato's, left the skins on and cut them in half once micro-waved, smashed them and used Italian dressing I had left, had no bacon or cheese on them, but they were still very good. Open to a number of variations I am sure.

Rated 3 out of 5 by from Recipe said nothing about keeping skins on potatoes so I did. Recipe said nothing about keeping skins on potatoes so I did. I guess I cooked them a little too long cause they smashed when I pressed them. Although I found out they were better when a little cooler. It was a great recipe and will do again, but with a different dressing.
