  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, water and A.1. just until blended; press into 12 muffin pan cups sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160°F).
  • Add cream cheese and garlic to potatoes; stir until cream cheese is melted. Stir in parsley. Scoop over meatloaves. Serve topped with gravy.

I made this using meatloaf seasoning pack, garlic powder, celery flakes, once cooked i had some left over marinara sauce so I topped it with that and used a package of instant potatoes with shredded cheese I added, then used a package of brown gravy mix to top it with. It was fabulous. We also had french style green beans, drained with a beef bouillion, simmered. Definitely a repeat recipe. Thanks for the idea !Judy in Alabama

I think it is a great idea and a small change to the standard meatloaf and mashed. I am going to make the pototatoes more like a twice baked with bacon and cheese and add to the top of the meatloafs and bake until cheese is melted and maybe a little brown. Sound good? Mmm.

Rated 5 out of 5 by from 1 lb. 1 lb. ground beef, 6 oz. low sodium stuffing plus 1 c. water, and Worchester sauce and A1 sauce to equal 2 T. I sprayed butter flavored PAM into a brownie not muffin pan. I used a 1/3 c. scoop which resulted in 11 mini meatloaves. I used my own mashed potato/spinach recipe. Cook at 20 mins. to reheat later.

I piped the potatoes onto the meatloaf and sprinkled them with bacon bits. From a distance they looked like cupcakes. I used instant potatoes and left out the garlic and parsley. They were actually really delicious.

The only thing I would change next time is I would cut the steak sauce in half as it was a little strong for me. I also stuffed the mini loafs with a small pinch of mozzarella cheese. Love the portion size!

I made it in tuna cans & they are great size for cutting one in half to make 2 sandwiches. Will be making it many times as the stuffing made it soft & potato topped plus peas was t big hit. Thanks

To save a few calories, I left out the cream cheese and made my mashed potatoes with 1 russet and 1 sweet and left out the garlic. My husband went on and on about how good it was! will def make this again.

Rated 4 out of 5 by from It was wonderful. It was wonderful. My grandson, said he was not hungrey but ate 4 of them. I used half ground chicken and half ground beef. Im not much of a ground beef lover. Easy to make ahead, pop them in the oven, less then half an hour dinner is served. Excellent
