  • Cook potatoes in boiling water in large saucepan 15 min. or until potatoes are tender; drain.
  • Mash potatoes. Add sour cream, cream cheese and milk; mash until blended. Spoon into microwaveable serving bowl; cover with plastic wrap. Refrigerate up to 2 days.
  • Meanwhile, melt butter in large skillet on medium-high heat. Add mushrooms; cook 5 min. or until mushrooms are tender, stirring frequently. Spoon into bowl; cover. Refrigerate until ready to use.
  • Vent plastic wrap covering potatoes by poking a few holes in the top just before serving. Microwave on HIGH 6 to 8 min. or until heated through; stir. Top with mushrooms. Microwave, uncovered, 2 to 3 min. or until heated through. Sprinkle with thyme.

You can peel the potatoes if desired - it's a matter of personal preference. But keep in mind that the peels add texture, nutrients and color to the dish.

Variations

Prepare as directed, using 2 pkg. (4 oz. each) sliced wild mushrooms, such as shiitake, oyster and cremini. Or, substitute fresh chives for the thyme. Or, sprinkle with 4 slices OSCAR MAYER Bacon, cooked and crumbled.

I fixed this recipe for Thanksgiving, and I loved them and everyone at the table loved them to. I did adjust the mushrooms a little by adding some chopped onion and a dash of soy sauce when i fried them. They were super delicious and were a superb addition to the potatoes... I am making them this weekend as well and I am trying the new golden potatoes instead of red....I will let you know how they turned out....

Rated 4 out of 5 by from I made this because I wanted to reheat in in the crock pot. I made this because I wanted to reheat in in the crock pot. I put a little liquid in the bottom of the crock to keep the potatoes from drying out, and heated for about 2 hours on High. They held well on Warm for another hour or so. I skipped the cream cheese but added garlic and they were yummy.

Definitely need to add your own seasonings to taste (salt,pepper,garlic and onion powder,etc.)- I also add parsley, chives, green onions, and parmesean, and a couple tbsp butter and a little more milk/sourcream/creamcheese for consitency...so good!

I made them the day before Thanksgiving, but I left off the mushrooms because my family likes just plain mashed potatoes. It was really nice to just pop them in my microwave at dinner time, as my oven was already full. They were a big hit!

I threw them in the trash and started over. I left all the peelings on the red potatoes and added 1 tsp salt, 1/2 tsp pepper. They were soooo good!

I served the mushrooms on the side allowing each person to put on as many or as few as he or she preferred. I used dry thyme. I also used russett potato, because that was what I had on hand. I did not have any complaints, which tells me it is a keeper.

I added roasted garlic to the potatoes and sauteed the mushrooms with chopped green onion tops. My husband loved them, too and I will definitely make these again.

I actually warmed them up in my slow cooker starting a few hours before dinner. It gave me a lot more time to visit with my guests!!
