  • Mix vegetables, sauce and 2 cups water in 12-inch skillet. Bring to boil.
  • Stir in pasta. Reduce heat to medium-low; cover.
  • Simmer 15 minutes or until pasta is tender. Sprinkle with cheeses; cover. Cook 2 minutes or until cheeses are melted.

Serving Suggestion

Serve with a crisp, mixed green salad, a whole-wheat roll and fresh fruit for dessert.

Substitute

Substitute 3 cups rotini pasta or 8 oz. spaghetti, broken in half, for bow tie pasta.

I used a 16oz bag of frozen mixed vegetables instead of the chopped fresh veggies it was still very yummy. Unfortunately my husband and 4 and 2 year old didn't like it at all!! But I do plan on making it again for myself!!
