  • Heat oven to 425°F.
  • Whisk vinegar, honey and mustard in small bowl until blended. Gradually add oil, stirring constantly. Stir in lemon zest.
  • Place asparagus in shallow dish. Add 2 Tbsp. prepared vinaigrette; toss to evenly coat asparagus with vinaigrette.
  • Divide asparagus into 8 bundles. Wrap each with prosciutto slice.
  • Place, seam sides down, on baking sheet sprayed with cooking spray.
  • Bake 13 to 15 min. or until asparagus is crisp-tender and prosciutto is crisp. Drizzle with remaining vinaigrette; sprinkle with cheese.

Variation

Stir 1 tsp. each chopped fresh basil and thyme into vinaigrette before tossing with the asparagus.
