  • Heat oven to 375°F.
  • Mix flour, baking soda and salt. Beat butter, sugars and pumpkin spice in large bowl with mixer until light and fluffy. Add egg, pumpkin and vanilla; mix well. Gradually beat in flour mixture until well blended. Stir in chocolate and nuts.
  • Drop by heaping tablespoonfuls, 2 inches apart, onto baking sheets.
  • Bake 12 to 13 min. or until lightly browned. Cool on baking sheets 1 min.; remove to wire racks. Cool completely.

Substitute 4 coarsely chopped squares BAKER'S Semi-Sweet Chocolate for the chocolate chunks.

They were more of a cake type cookie but they still tasted good and weren't dry at all. I used dark chocolate chips since it was cheaper than the chunks and it was just as good. Rated 5 out of 5 by from I have made these already, twice! I have made these already, twice! My boyfriends mother loved them because they were a treat that is not as sweet as many treats are. I was originally not expecting to use actual pumpkin and thought that the recipe would obtain pumpkin flavor just with the pumpkin pie spice. I think its awesome that actual pumpkin is added right in. I subsequently made for my office and they were nearly gone in almost 15 minutes.

Next time I will add more nuts and chocolate chunks as I found there was alot of batter with none it come the end of the bowl. Great hit - even my husband who doesn't like pumpkin loved them!
