ARRANGE half the ladyfingers on bottom of 13x9-inch dish. Dissolve coffee and 1 Tbsp. sugar in boiling water. Brush 1/2 cup coffee mixture over ladyfingers in dish.
BEAT Neufchatel in large bowl with mixer until creamy. Add 2/3 cup sugar; mix well. Add pumpkin and cinnamon; mix well. Blend in COOL WHIP.
SPREAD half the Neufchatel mixture over ladyfingers in dish; top with remaining ladyfingers. Brush with remaining coffee. Cover with remaining Neufchatel mixture. Grate chocolate over top. Refrigerate 4 hours.
