These turned out okay, but not quite how I expected. The pumpkin layer is quite thin, and also tastes very pumpkin-y, with the cream cheese flavor somewhat lost. The crumble layer is very "flour-y," and not very chunky, which I found odd. The crust is very bland and not flavorful, and also difficult to release from the bottom of the baking dish. Not my favorite dessert.
These were delicious!! I used the whole small can of pumpkin instead of just one cup and they turned out great. Topped them with whipped cream..YUMMMY!!
Just answering ginger question... if you use pumpkin pie spice, that has ginger in it. I would've thought the same thing! Did you make it? Wondering how these taste...
