  • Arrange 32 wafers on bottom and up side of 2-1/2-qt. serving bowl. Beat cream cheese and pumpkin in medium bowl with mixer until blended. Add vanilla and pumpkin pie spice; mix well.
  • Beat pudding mix and milk in medium bowl with whisk 2 min. Let stand 5 min. Stir in 1-1/2 cups COOL WHIP. Add cream cheese mixture; mix well.
  • Spoon half the pudding mixture into prepared bowl; cover with layers of remaining wafers and remaining pudding mixture. Top with remaining COOL WHIP. Refrigerate several hours or until chilled.
  • Top dessert with Autumn Spiced Nuts just before serving.

Variation

Prepare using PHILADELPHIA Neufchatel Cheese, 1 pkg. (1 oz.) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding, fat-free milk and COOL WHIP LITE Whipped Topping.

I entered this recipe without the "Nilla Wafers" into the Recipe Builder on my Weight Watchers site, and it is only ONE POINT per serving when made with Philadelphia brand fat free cream cheese, Jello Sugar Free/Fat Free Instant Pudding, and Cool Whip Free. Woo Hoo !!!! That's a keeper !!

Rated 5 out of 5 by from This is fantastic! This is fantastic! We all liked it better than the pumpkin cheesecake I made- it has a lot of pumpkin & spices for extra flavor, and is very creamy. I would add more Nilla wafers & cool whip in between the layers. It's almost like a traditional Banana Pudding, except with pumpkin! WOW!

Substitutions and additions: Jello's Instant Pudding - Pumpkin Spice flavor, 3/4 cup brown sugar, 1/2 tsp cinnamon (add sugar and cinnamon to cream cheese mixture), and Cinnamon Flavored Cool Whip for topping. Awesome recipe with those substitutes and additions!

I ended up adding powdered sugar to mine because it was so bland. Everyone said they liked it, but I thought it definitely was not worth the hassle.

Rated 3 out of 5 by from This is a really bland dessert. This is a really bland dessert. However, if you simply add 1/2 cup powdered sugar beaten in with the cream cheese and pumpkin mixture, it gives it the extra flavor that is definately lacking. Good for a diet recipe!

Rated 3 out of 5 by from I loved this recipe! I loved this recipe! the only thing that i would add is 1 cup of powdered sugar to the cream cheese mixture. This is because its a little bland otherwise. Its got more of a bite to it without the sugar! THANKS!
