  • Heat oven to 350°F.
  • Beat eggs in small bowl. Stir in cereal; let stand 5 min.
  • Combine flour, baking powder and pumpkin pie spice. Beat butter and brown sugar in large bowl with mixer until light and fluffy. Add cereal mixture and pumpkin; mix well. Stir in flour mixture and raisins until blended. Pour into 9-inch square pan sprayed with cooking spray.
  • Bake 25 to 30 min. or until toothpick inserted in center comes out clean. Cool completely. Sprinkle with powdered sugar just before serving.

Substitute

Tap into the variety of dried fruits now available at the supermarket. When recipes call for raisins, try using another dried fruit, such as blueberries, cherries, cranberries, dates, figs or prunes, instead. If using larger pieces of dried fruit, be sure to cut them into smaller raisin-size pieces before using.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

I did not have any flour in the house but did have a biscuit mix so I substitued 1/2 cup instead of 1/4 cup added no butter, powder and due to diabetics in fam. used 1/4 cup of sugar and two teaspoons of honey added 1/4 cup low-cal sour creme and we had a very healthy and tasty treat thay people raved about ans asked for the recipy . thanks for the recipy and you could use egg sub. if wanted to It changed the calorie and cholesterol, and sugar intake immensely thanks again..

Rated 3 out of 5 by from Moist, and pretty good other than the raisins. Moist, and pretty good other than the raisins. The raisin-pumpkin combo tasted strange together. Perhaps chopped pecans would be better, but I don't think I'd bother making it again to try.
