  • Bring water to boil in large saucepan. Add tomatillos; cook 5 min. or until tender. Drain, reserving 1/4 cup cooking water. Blend tomatillos, 2 Tbsp. reserved water, onions, garlic and chipotle peppers in blender until smooth. Add additional reserved water to thin, if needed.
  • Heat oil in large skillet on medium heat. Add chicken; cook 6 to 7 min. on each side until done (165º F). Top chicken with cheese; cover. Simmer on low heat 1 to 2 min. or until cheese begins to melt.
  • Place chicken on platter. Spoon sauce over chicken.

Preparing Tomatillos

Tomatillos look like small green tomatoes with a papery husk or shade-like covering. Several are usually attached to a vine when purchased. Detach tomatillos from the vine and peel away the husks to reveal the fruit. Wash fruit in cold water, then slice or chop and use as directed in recipe.

Special Extra

Sprinkle with 1 Tbsp. chopped fresh cilantro and/or top with a squeeze of fresh lemon juice just before serving.
