  • Preheat oven to 375°F. Prepare pie crust as directed on package for unfilled 1-crust pie using 9-inch pie plate. Sprinkle cheese, bacon and onion evenly onto bottom of crust.
  • Beat eggs, cream and mustard with wire whisk until well blended; pour over ingredients in crust.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean.

Spread 1 pkg. (10 oz.) frozen chopped spinach, thawed and well drained, onto bottom of pie crust, then top with cheese, bacon and onion. Continue as directed.

Cover edge of pie crust with strip of foil for the last 15 min. of the baking time to prevent it from browning too much.

I saved lots of time by using pam- sprayed ramekins gently lined with flour tortillas, instead of a pastry shell. It made such an hit, that everyone from the kids to the elderly men raved about them. Because of the mustard, no spices are needed, and they are really fast to assemble.

Rated 4 out of 5 by from Very easy and everyone loved it. Very easy and everyone loved it. It had plenty of flavor. I put the spinach in it and my husband said it was a little too much. Next time, I will only put in about 4 oz of spinach instead of the 10 suggested at the bottom of the recipe.
