  • Heat oil in medium saucepan on medium heat. Add onions and celery; cook 3 min. or until crisp-tender, stirring occasionally.
  • Add mushrooms; cook 3 min. or until mushrooms are tender, stirring occasionally. Add broth; stir. Bring to boil.
  • Stir in rice; cover. Reduce heat to medium-low; simmer 5 min. Remove from heat; let stand 5 min. Add walnuts and parsley; mix lightly.

Substitute

Substitute PLANTERS Slivered Almonds for the walnuts.

Rated 5 out of 5 by from OMGOSH! OMGOSH! This was sooo YUMMY! My hubby and youngest son who are very picky when it comes to rice ate this up sooo fast! I've made it twice this week so far! I didn't add any nuts, and I added 2 1/2 cups of water with 3 tsp chicken bouillon instead... and it had plenty of flavor!

I did add salt and pepper and a little curry powder for an extra kick. Also used the almonds instead of the walnuts. The is definitly a keeper in my house:)

Rated 5 out of 5 by from I really enjoyed this recipe. I really enjoyed this recipe. I didn't put celery in it but it still was very good. The chicken broth really brought the flavor of the rice. I also put a little curry powder and salt and pepper.
