Next time I make it, however I will add a cup of extra water. My husband also suggested trying rice instead of the pasta sometime. This soup is so versatile, easy, and above all DELICIOUS!

I made it the day before and added cooked pasta before serving so that they didn't get soggy or absorb too much of the soup. The flavors had a chance to come together and it was wonderful!

I substituted the 2 cups of water with 2 cups of low-sodium chicken broth, and used fresh italian veggies including kidney and garbanzo beans,fresh basil was also needed. Serve with toasted garlic rounds with asiago cheese.

I made this recipe the first time right after Thanksgiving, and you guessed it, I used left over turkey. This was a huge hit with my husband, and he said please, make it again.
