  • Cut chicken breasts horizontally in half; pound to 1/4-inch thickness. Combine tomatoes and 3 Tbsp. dressing.
  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 2 to 3 min. on each side or until done (165°F), drizzling with remaining dressing for the last minute. Transfer to platter; cover to keep warm.
  • Add tomato mixture to skillet; bring just to boil, stirring frequently. Add spinach; cook on medium heat 2 to 3 min. or just until spinach starts to wilt, stirring constantly.
  • Spoon spinach mixture over chicken. Serve with rice.

How to Pound Chicken

Place chicken breasts, 1 at a time, between 2 sheets of plastic wrap, then pound to desired thickness.

    Quick, easy and VERY tasty! I also lightly seasoned the chicken beforehand with salt & pepper. No worries about re-heating -- we ate every bite. Will definitely make this one again!

    I loved it. I followed the recipe exactly how it was written. I julianned some sun dried tomatoes and sprinkled them over the top. My husband didn't like it at all he said it was bland.

    Very good and easy to make, I did preseason the chicken because a past of making recipes off this site and they were bland. I sprinkled the chicken with Italian blended cheese to make it more kid friendly. I doubled the spinach so it could serve as a side as well replaced brown rice with roasted garlic potatoes. I thought it set well as a leftover. Delicious!!!
