  • Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 min.
  • Add broth, broccoli, red pepper and carrots. Bring to boil.
  • Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in lemon pepper seasoning; sprinkle with cheese.

Rated 3 out of 5 by from I put 3-4 oz of Mozz. I put 3-4 oz of Mozz. Cheese with the Parm. Cheese on it right before serving. It helped give it the tangy taste. Along with some lemon juice in the rice water, like 10 minutes before it was done cooking. I added a tad bit more Italian Dressing than stated while cooking. I added more lemon pepper seasoning, plus a little of another seasoning. It was good. Very filling. I made it for Mother's Day. My mother liked it, as well as my siblings, and my family. WILL make again... Oh, and didn't have red pepper so I substituted with green pepper. Still turned out great...

Rated 4 out of 5 by from I made this dish tonight for dinner. I made this dish tonight for dinner. I think it was very tasty, and easy to put together. My wife also enjoyed it and will have it again. I didn't have any broccoli on hand so I substituted frozen spinach, and left out the carrots, seeing my wife doesn't like cooked carrots. Could also make it with other veggies, yellow and green squash. Like a prima-vera. Would make it again.

It seemed to be under-seasoned, a problem that was fixed somewhat with extra lemon pepper and cheese on each serving, but the chicken didn't seem to take in much of the dressing, and the lemon flavor I had expected was lacking. I may make this again, but if I do, I'll have to tweak it a bit.

I normally don't like Italian dressing but in this recipe it gave the chicken a great flavor. My kids actually ate all the vegetables and my husband loved it. I also added a little lime juice at the end to give it a little more of the tangy flavor.

Rated 4 out of 5 by from This is pretty good. This is pretty good. I almost don't think there's enough fluid as the recipe calls for if you live in a dry, high-altitude area, and especially if you're using brown rice. Othereise, it turned out wonderful.

Love the chicken/Italian dressing combination, but think adding a garlic clove (minced) and maybe some chopped onion, while frying the chicken in the dressing, would make the rice more flavorful.
