  • Cook spinach and 1 Tbsp. water in medium skillet sprayed with cooking spray on medium heat 4 to 5 min. or until spinach is tender, stirring occasionally.
  • Mix remaining ingredients; pour over spinach. (Do not stir.) Cover; cook 5 min. or until center is set.

Save 50 calories and 8g fat, including 4g sat fat, per serving by preparing with cholesterol-free egg product, KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese and OSCAR MAYER Turkey Bacon.

Note

The uncooked spinach will generously fill the skillet but will cook down quickly.

Variation

    Have fixed this a few times and hubby an I really like it. Hubby shakes some red pepper flakes on his and I like to put salsa on mine. This is a regular brunch meal.
