Friday night is usually pizza night, but tonight he requested this again. I did a bit of garlic to the recipe and instead of mozzerella (not a fan of the texture) I used colby/monterey jack cheese. It was really good. Make sure you REALLY drain the spinach or it will be too runny. When you think you've squeezed the water out of the spinach, do it again. I have no idea how a 10oz box of spinach could hide so much water, but it does.

It is incredibly easy and healthy but it is also incredibly versatile. I have made at least half a dozen variations of this pie using different meats, cheeses and veggies such as veggie sausage & sharp cheddar, turkey bacon & blue cheese and goat cheese with onions, spinach and tomatoes. This one is a winner every time!! Does take about 10-15 minutes longer to bake than the directions say but well worth the wait :)

After you drain the spinach and the peppers saute them together over med high heat until dry. It removes all the liquid. Stir frequently and dont let it burn. I chose to use fresh spinach and added fresh mushrooms and garlic to the saute pan also. I browned up 1/2 lb of hot Italian sausage and threw that in too. Seasoned with nutmeg and black peeper. This pie was outta sight!! Fast and easy..A+!

To the reader who said it needed some spice, believe it or not, a pinch of cinnamon could do the trick--even nutmeg. For the husband who missed the meat, I could see adding some turkey pepperoni and/or turkey sausage. Not only did I use fresh chopped peppers, I added some chopped onions and mushrooms. Very versatile dish for pot-lucks and social occasions, either as side dish (as written) or a main dish (with the add-in's to taste).

A tasty low carb crustless quiche that is easy to make, portion and store in the fridge. I cooked mine in a 8x8 glass dish for about 10 minutes longer to a golden brown around the edges. It's a bit watery in the middle when you first make it and (like lasagna) is best eaten the next day. It makes a quick and easy tasty lunch by just heating it in the microwave.

Rated 5 out of 5 by from Oh this is so good! Oh this is so good! I have never had anything like this before but it was surprisingly easy to make. I actually made this tonight and will have plenty of leftovers for tomorrow and my mom on Saturday. Probably works best for a family larger then two hehe. I did followed someone's advice on here and sauteed the peppers and spinach first worked really well. I also hope to try it with a pie crust, and some meat next time.

Rated 5 out of 5 by from This is now a staple in my family's diet. This is now a staple in my family's diet. We love this dish. It's very easy to make and VERY flavorful. I had a bit of trouble the first time, getting it to 'set'. It was too mushy after being baked for the time that's stated. What I have been doing is doubling the recipe (so that we can have it for breakfast the next day) and I bake it on 365 degrees for one hour. It turns out great that way!

My husband and I are trying to watch what we eat, and this recipe is a perfect breakfast for us! Flavorful, nourishing, and quick to put together. I mixed it up really quick and let it bake while we got ready. A filling breakfast is important to keep you on track all day, and this recipe fills you up and still keeps your calorie count nice and low. Definitely making this often!
