  • Heat oven to 350ºF.
  • Combine tomatoes and basil in 13x9-inch baking dish sprayed with cooking spray. Use back of spoon to make 8 wells in tomato mixture. Slip cracked egg into each well.
  • Bake 25 min. or until egg whites are set and yolks are cooked to desired doneness. Top with cheese; bake 5 min. or until melted.
  • Serve over muffin halves; sprinkle with parsley.

Substitute

Prepare using no-salt-added stewed tomatoes.

Was a little too juicy (from baking the tomatos) for some people, but I loved it!!! DEFINITELY season it before you bake it, otherwise may turn out a little bland. It was also a beautiful presentation - - can't wait to make it again!

For those of us who have to watch our cholesterol, you can make this recipe using egg whites instead of the whole egg. It's just as delicious! Also use fresh tomatoes instead of stewed, which also reduces the sugar content and salt content if you are diabetic!!

We like things spicy at our house, so I substituted a can of Ro-tel spicy tomatoes for the plain stewed tomatoes. It was a big hit! I'm also going to try it served over a large grilled portabello mushroom instead of the english muffin for my ladies group.

Rated 3 out of 5 by from This was very tasty! This was very tasty! I added more cheese to the tops of the muffins, which enhanced the taste. But it didn't look as presentable as I thought it would have. Nevertheless though, I will definitley make it again for my family!
