  • Heat oil in medium saucepan on medium heat. Add mushrooms and onions; cook and stir 5 min. or until tender.
  • Stir in rice, water and wine. Bring to boil; cover. Reduce heat to low. Simmer 20 min. or until rice is tender.
  • Stir in 1/2 cup of the cheese and the milk. Sprinkle with remaining 1/4 cup cheese.

Substitute

Prepare as directed, using DIGIORNO Shredded Parmesan Cheese.

Rated 4 out of 5 by from This side dish was wonderful. This side dish was wonderful. It was a nice change from the normal pasta or rice side dish. The only thing that i definitely had to add in this recipe was SALT!!! I highly recommend adding salt because without it, it was bland, and the flavors were muted, but the salt brought out the flavors of the wine, onion, mushroom and cheese!

Last night, I spent over 25 minutes stirring and stirring while making my very first risotto recipe. Tonight, since last nights results weren't that great, I tried this recipe with the white rice and was thrilled at the results. Its a good recipe and certainly saves one on stirring! Bravo to the chef!

Rated 4 out of 5 by from This was very tasty! This was very tasty! I had to add a little more wine and water as the rice didn't quite get cooked thoroughly with the current ingredients. But once the rice was cooked it was wonderful. My guests loved it!!
