  • Cook sausage in large nonstick skillet on medium-high heat 12 min. or until done (160ºF), turning after 6 min. Remove sausages from skillet; cover. Discard drippings from skillet.
  • Add peppers, onions and dressing to skillet; cook and stir 5 min. or until vegetables are crisp-tender. Stir in tomatoes. Bring to boil; cook 5 min., stirring occasionally.
  • Cut sausages lengthwise in half, being careful to not cut all the way through to bottom of each. Open sausages; place, cut sides down, on bottom halves of rolls. Top with vegetable mixture and cheese.

Special Extra

Sprinkle 1 Tbsp. chopped fresh basil over filling in each sandwich.

Serving Suggestion

Serve with a fresh fruit salad.

I recommend slicing the sausage into layers for the kids - halves were still a little big and hard for them to handle. They have requested that this become a regular meal (at least every 2 weeks!) I like it because we are limited on time after soccer and I had dinner ready in 30 minutes!

Rated 5 out of 5 by from Loved it! Loved it!!! I always try to cook healthy so I used turkey bratwurst (couldn't find a light version of italian sausage) and 2% cheese. This recipe is completely different than what I normally make and maybe that was the appeal to it. It was so tasty and flavorful and I was able to make it with less fat.

I didn't have the correct dressing to saute he peppers,onions and tomatoes, so I used a substitute. My family loved it. I served a large Italian salad and the dinner was complete. I will make it again often.

I used Italian diced tomatoes. I served it with baked tater tots and a lettuce salad. I will make it again, but not very often due to the fat content.

Rated 4 out of 5 by from My kids loved this. My kids loved this. Just mild enough for them to eat 2 sandwiches! I cooked the peppers and onions with the sausage to have them a little more soft and to get the flavor with the sausages. I doubled the recipe for a family of 5 (all boys).

I BBQ'd the sausages (while it was snowing outside!) and they were extra flavourful. I would definitely do this again. It would be so great during the hot summer months.
