Quick Rosemary Lamb Chops

lamb loin chops (1 lb.)

small onion, chopped

3/4

cup roasted red peppers, drained, chopped

1/4

cup beef broth

1/4

cup KRAFT Balsamic Vinaigrette Dressing

1/2

tsp. chopped fresh rosemary

cups hot cooked rice

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add chops; cook 6 min., turning after 3 min. Remove from skillet; cover to keep warm.

ADD onions to same skillet. Cook 5 min. or until onions are tender, stirring occasionally. Stir in peppers, broth, dressing and rosemary. Add chops. Reduce heat to medium-low; simmer 4 min. or until sauce is thickened and chops are cooked through (160°F).

SERVE with the rice.

Serve with hot steamed broccoli.

Substitute

Prepare as directed, substituting 4 bone-in pork chops (1-1/2 lb.) for the lamb chops and increasing the rosemary to 1 tsp.

This was great. We made it for company with grass feed lamb and it was delicious. We kept the lamb hot in the oven while fixing the onions and peppers so it was convient as well.

It was very easy to make; and the sauce was very flavorful. The meat itself was very bland though. Maybe marinating the lamb would make it a tastier dish. Not bad. I will keep searching though.

I made this dish 2 nights ago - it was fabulous AND fast! I used very good lamb chops, added considerably more rosemary (becasue my husband and I love it), and made more of the delicious sauce by using the liquid from the jar of roasted red peppers. I have shared the recipe with several of my cowokers, and will definitely make it again.

I made this recipe tonight and had to tell you how delicious it is. I made some adjustments, added garlic, and didn't have the dressing it called for, I did use one I had Black Cherry Balsamic dressing. My chops were 2.5 inches thick. I knew they wouldn't cook quickly, I covered the skillet, took it off when my chops were pink and I could thicken the sauce. I will make it again and again. Thank you.

Would not make again with the lamb. Even though, I love lamb it was way too expensive for the end product. May try pork chops or flank steak next time because sauce was good.

Perfect as if. Required more simmering than recommended.
