  • Cook bacon in large skillet until crisp. Remove bacon from skillet; drain.
  • Add dressing, onion, garlic and jalapeño pepper to skillet; cook 5 min. Add tomato sauce and chili powder; cook 5 min. Add shrimp; cook 5 to 8 min. or until shrimp are pink.
  • Spoon shrimp mixture over rice. Sprinkle with bacon and peanuts before serving.

Creative Leftovers

This is a great recipe to use leftover vegetables. Add them to tomato sauce and cook until heated through. Continue as directed.

Often shrimp is wrapped in plastic when purchased. When you get home, punch a few holes in the plastic and place it in a bowl. Store in the refrigerator (40°F or less) up to 1 day.

    I really enjoyed this meal. I think next time I will add a little curry and because I enjoy spicy food a little more chili spice and some cayenne pepper.


    Pretty good recipe. I made some changes, but it really worked well. I didn't add bacon or the nuts. Instead I added red and yellow peppers.
