Quicker-than-Fast Food Egg Sandwich

I just made this - but with ham instead of bacon as that is all I had. Oh my - it was so good! I will have to make it for my teenagers - they will love it! And it is good for them too - much better than a pop-tart! I had no problem with the egg staying on the muffin. I think because I used Thomas's english muffins. You need a rougher surface that some that are machine split and smooth. Fork split is better.

I like to make this recipe when company spends the night, it's always a hit and much better than going out for breakfast.

This was really good and super easy and quick to make. I made it w/ ham instead of bacon. And i put the egg on a round plate and cooked it while i toasted the english muffin then i put it all together and heated it the las 30 seconds.

I like my muffin a little crispier then the microwave can do, so I toss it in the toaster as I take a small bowl (about as big as the muffin) and make the egg in the microwave (20 sec) top it with bacon bits and cheese (another 20 seconds) put it on the toasted muffin when it pops up. I also like to add a few jalepanos, or some avocado, or switch in sundried tomatoes and mozzerella. When I am really tight on time I make it per the original recipe execpt to keep the egg in place I put the muffin in the bottom of the bowl.

I made these for breakfast every single day for a week... They're quick, easy, and BETTER than any fast food sandwich! My only complaint is that the egg was difficult to keep on the muffin half. I tried both extra-large and large eggs, so maybe a medium egg would work best?

I tried it with bacon, it did not cook good in the amount of time suggested, I did another 40 sec and again it was not done. I chose to cook the bacon seperately in my george forman grill, this took longer than expected, not good for a quick out the door

This was very easy, and good for a morning on the go. The egg would slide off the muffin, but I just cook that on a plate and put on after.

Try making the egg in the microwave it cuts the time down ALOT. Spray a small bowl with cooking spray, break the yolk then cook, watch your time it cooks really fast, you will need to loosen the edges with a spatula as it cooks and move the top yolk around but it only takes like 45 seconds to a min for each egg. My son loves this and he can help make this with me in the mornings.

This was Quick and easy the egg didn't stay put but when the egg sets up just spoon the white back on the muffin. I loved this so much I had seconds. I left off the bacon though (didn't have any).

This wasn't as simple and quick as it seemed. The egg wouldn't stay put nor the cheese. The times were off as well. Honestly I had a quicker and easier time just frying up an egg real quick and assembling the rest the same way. It also took a while for it to cool for the children. Good idea though.
