I just made this - but with ham instead of bacon as that is all I had. Oh my - it was so good! I will have to make it for my teenagers - they will love it! And it is good for them too - much better than a pop-tart!
I had no problem with the egg staying on the muffin. I think because I used Thomas's english muffins. You need a rougher surface that some that are machine split and smooth. Fork split is better.
I like to make this recipe when company spends the night, it's always a hit and much better than going out for breakfast.
