  • Heat oil in large saucepan on medium heat. Add onions; cook and stir 4 min. or until crisp-tender. Add quinoa; cook and stir 1 min.
  • Add broth; stir. Bring to boil; cover. Simmer on medium-low heat 18 min. or until quinoa is tender. Stir in broccoli; simmer, covered, 2 to 3 min. or until broth is absorbed and broccoli is crisp-tender.
  • Top with cheese and bacon.

Storage Know-How

Cool any leftovers. Refrigerate up to 4 days. Reheat before serving.

I only rated it as fair since the recipe (as is) is really only a good "starting point" to build from - in my opinion, it's not a complete recipe. I modified the original recipe by adding: fresh sliced mushrooms, 1/4 c Parmesan cheese, 1/4 c toasted slivered almonds, 2 tbsp soy sauce, 1 clove of garlic (minced), 1/2 tsp paprika and salt/pepper to taste.

Rated 5 out of 5 by from WOW! WOW! So easy to make and absolutely delicious! I added a little bit more broth when it looked like it was all absorbed before I added the broccoli. Served it with chicken, but could have eaten this as a main entrée. I am looking forward to making this again! Family loved it too!

It was good, but very bland, especially before the cheese and bacon, seemed like it was missing something- spices, more veggies, or a sauce perhaps. Otherwise good, very filling.
