  • Heat 1 tsp. oil in large nonstick skillet on medium-low heat. Add eggs; cook 2 to 3 min. or until set, stirring occasionally. Remove eggs from skillet; set aside. Wipe skillet clean with paper towel.
  • Heat remaining oil in same skillet. Add quinoa; cook 5 min., stirring frequently.
  • Reserve 1 Tbsp. onions for later use. Add remaining onions to quinoa in skillet along with all remaining ingredients; cook 3 to 4 min. or until heated through, stirring occasionally. Stir in eggs.
  • Top with reserved onions.
