Flour tortillas are available in a variety of other colors and flavors, such as spinach and green onion. Look for them in the refrigerated or bread sections of your supermarket.
Assemble roll-up as directed. Place in airtight container or wrap tightly in plastic wrap. Refrigerate up to 4 hours. Cut into slices just before serving.

this recipe was very easy to make and very tasty. I omitted the lettuce because it wilts when it stays in the lunchbox to long.
Served this to three friends and they loved it!
There are so many great variations you can do on this sandwich. Note that spinach leaves tend to stay fresher than lettuce in these, tho. I also use herbed cream cheese as a "base on the tortilla, spreading in one area to the edge; it makes a nice "sealer" as well as adding flavor. It's been a long-time lunchbox favorite with my kids (now 16 & 17) and is great for picnics and parties (cut as appetizers) but the best use was as a "first cooking" venture for my kindergarten & pre-K "Daisy" Troop who made them & served them to their moms!
