  • Prepare cake batter as directed on pkg., using the egg white version. Pour evenly into 24 paper-lined or greased medium muffin cups, then bake as directed on package. Cool cupcakes in pan 15 min. Pierce cupcakes with large fork at 1/4-inch intervals.
  • Stir boiling water into dry gelatin at least 2 min. until completely dissolved; spoon over cupcakes. Refrigerate 3 hours.
  • Spread whipped topping over cupcakes. Draw umbrellas on cupcakes with decorating gel. Sprinkle with colored sugar; top with jelly beans. Store leftover cupcakes in refrigerator.

How To Thaw COOL WHIP

Thaw unopened 8-oz. tub of COOL WHIP in the refrigerator for 4 hours. Do not thaw in the microwave.

Rated 5 out of 5 by from OH MY GOSH! OH MY GOSH!!! I love this recipe! I haven't actually made the 'cup'cake version. I usually make the whole cake. But I saw this recipe and I think I might change it slightly. Instead of drawing the umbrella on, I'd get the little beverage umbrellas and stick them in the top of the cupcake, slightly to the side and then sprikle the colored sugar crystals. (I'd probalby use blue jello and blue crystals - you know for water). How cool. Its been a rainy few days, I wish I'd come across this sooner. I could have made this with the kids. Great for a rainy day treat (and boredom crusher!) Anyway...Great recipe!!!!
