  • Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Beat cream cheese in large bowl with mixer until creamy. Gradually beat in lemonade concentrate, then gelatin until blended.
  • Add COOL WHIP and berries; stir gently until blended. Pour into crusts.
  • Refrigerate 1 pie 4 hours or until firm. Freeze remaining pie up to 1 week before thawing to serve.

How to Use Remaining Lemonade Concentrate

    Everyone really loved this pie but I did add an extra tbs. of sugar to the Jello ! It's a really light tangy pie . If you want a firmer pie you could also add 1/2 packet of unflavored gelatin to the Lemon jello . I also would let my Jello cool to room temp or slightly thickened next time before folding it it in the lemonade and cool whip etc. as it keeps it from separating. And make sure ***** cheese is room temp and cool whip completely thawed and it will blend better. If you are a fan of lemons you are going to love this flavor!!!

    I made this last nite - I used strawberries since the store didnt have rasberries. I had a difficult time with lumps. I dont know if it was the cream cheese or the coolwhip that was lumpy. It took a long time to set, infact it only set with I put it in the freezer. Its very tart. I would maybe add some sugar if I were to make it again.
