  • Heat grill to medium heat.
  • Spray 8 large heavy-duty foil sheets with cooking spray; set aside. Combine first 6 ingredients.
  • Place 1/4 cup cheese on bottom half of 1 tortilla; top with 1/2 cup bean mixture and 1/4 cup chicken, leaving 1-inch border around bottom and side of tortilla half. Fold bottom edge of tortilla over filling, then fold in opposite sides of tortilla and roll up. Place, seam-side down, near bottom edge of 1 prepared foil sheet; roll up to enclose burrito. Twist both ends of foil to seal. Repeat with remaining tortillas and filling.
  • Grill with lid closed 15 to 20 min. or until heated through, turning occasionally.

    Very easy and healthy way to have a mexican night with the family. We enjoyed this dish a lot.

    These were great. I left out the red peppers though because I don't really care for them. I would compare these to being as good as something you'd get at a restaurant. Next time I think I'll try black beans instead of pinto!

    Sharlene-if you don't like red peppers leave them out of your recipes :) and for just in case you didn't peppers have great nutritional benefits ;) We love this recipe,it is so quick and easy,we have also substituted drained can corn for the frozen and drained can chicken for the chicken strips. It was still delicious. Next time I am going to slip in some avocado pieces.
