What You Need

2-1/2

cups boiling water, divided

pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Gelatin, any red flavor

cup cold water

pkg. (4-serving size) JELL-O Lime Flavor Gelatin

cup vanilla ice cream, softened

cup thawed COOL WHIP Whipped Topping

Make It

STIR 1-1/2 cups of the boiling water into red gelatin in large bowl 2 minutes until completely dissolved. Stir in cold water. Reserve 1-1/2 cups gelatin at room temperature. Pour remaining red gelatin into wreath or 5-cup mold sprayed with cooking spray. Refrigerate about 45 minutes or until set but not firm (should stick to finger when touched and should mound).

STIR remaining 1 cup boiling water into lime gelatin in medium bowl 2 minutes until completely dissolved. Spoon in ice cream, stirring until ice cream is completely melted and mixture is well blended. Spoon over red layer in mold. Refrigerate about 20 minutes or until set but not firm.

SPOON reserved red gelatin over creamy layer in mold. Refrigerate 4 hours or until firm. Unmold. Top with whipped topping. Store leftover gelatin mold in refrigerator.

Substitute

Prepare as directed, except substitute JELL-O Sugar Free Gelatin, low-fat frozen yogurt and COOL WHIP LITE Whipped Topping.

How to Unmold Gelatin

Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

I've brought this to my SIL's house for Christmas, for probably 4-5 years now. It's so festive-looking! I wonder if the diet gelatin makes less, because with regular gelatin, it's about the same size as the picture. I have the tupperware jello mold, that is the same size as the one in the picture. We always use the Christmas tree on the top (except for last year, when we used the star, because the Christmas tree was misplaced!) This year, we found it a few months ago and kept track of it.

Excellent recipe, I made it with diet gelatin. The only problem with the recipe is that when followed exactly, it doesnt turn out as big as the picture. It needs to be doubled for the correct appearance.
