Red, White & Blue JELL-O Salad

  • Stir 1 cup of the boiling water into each of the red and blue gelatins in separate medium bowls at least 2 minutes until completely dissolved. Stir 1/2 cup of the cold water into each bowl.
  • Place bowl of red gelatin in larger bowl of ice and water. Stir about 8 minutes or until thickened. Stir in strawberries. Pour into 9x5-inch loaf pan sprayed with cooking spray. Refrigerate 7 minutes.
  • Meanwhile, stir remaining 3/4 cup boiling water into lemon gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in ice cream until melted and smooth. Spoon over red gelatin in pan. Refrigerate 7 minutes.
  • Meanwhile, place bowl of blue gelatin in larger bowl of ice and water. Stir about 7 minutes or until thickened. Stir in blueberries. Spoon over lemon gelatin in pan.
  • Refrigerate 4 hours or overnight until firm. Unmold. Cut into 16 slices. Store leftover gelatin mold in refrigerator.

Substitute

Substitute any red gelatin for the strawberry flavor gelatin.

Substitute

Substitute vanilla frozen yogurt for the vanilla ice cream.

How to Unmold Gelatin

Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

I used all jello-sugar free gelatins, except for the Berry Blue because I couldn't find it in sugar free- next time instead of mixing ice cream in with the lemon gelatin, I think I'll mix in Cool Whip Free instead. Also, I used French Vanilla flavored ice cream in place of regular vanilla. Turned out fantastic! Everyone applauded me.

Rated 2 out of 5 by from i made this mold, but substituted ice cream with frozen yogurt because it said i could. i made this mold, but substituted ice cream with frozen yogurt because it said i could. when i put the bottom layer on top (the blueberries) some of the lemon center seaped through. i left it in the refrigerater almost 24 hours, and when i went to take it out, the whole thing collapsed, it may be because i chose frozen yogurt, but i wouldn't suggest this; it was time consuming as well.

It is time consuming, but well worth it. This is definitely a crowd pleaser that everyone will oohh and aahh over.
