  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice to cold water to measure 1-1/2 cups. Add to gelatin; stir. Remove any undissolved ice. Refrigerate 30 min. or until slightly thickened (consistency of unbeaten egg whites.)
  • Stir in melon balls and mint leaves. Spoon into 9x5-inch loaf pan.
  • Refrigerate 4 hours or until firm. Unmold. Store leftover gelatin in refrigerator.

Substitute

Prepare as directed, using JELL-O Lemon Flavor Sugar Free Gelatin.

Not a mint lover? Simply omit mint leaves.

I let the jell-o set longer in the fridge and let it set longer than required. When I served it is was set well. I made two different recipes of this. One I used strawberries and strawberry jell-o and it turned out well, I also added a dollap of Cool Whip.

When I made this - the jello didn't "set up" and the melon (of course) has water in it - the jello ended up like water.....very mushy. Will try it again.

I don't like mint so i didn't add it. but the melons were need. want to try with strawberry jello and lime jello. cool on a hot day
