  • Mix beans and 1/2 cup of the cheese in 1-quart microwavable dish; cover.
  • Microwave on HIGH 3 to 4 minutes or until heated through; stir. Sprinkle with remaining 1/2 cup cheese. Microwave, uncovered, 1 to 2 minutes or until cheese is melted.
  • Sprinkle with tomato and onions.

So I tried this recipe tonight. I did use about 25% more tomato and green onions, and put this directly into the bean/cheese mixture. Also added a bit of unsalted butter (due to a reviewer). It turned out a little less like lead. And if I have to eat refried beans again, I would repeat this recipe!!!

Rated 5 out of 5 by from mmmmm, such cheesy goodness! mmmmm, such cheesy goodness! LOVE this recipe. Seems so obvious, but I still needed somebody to tell me to do it! I used a finely shredded 4 cheese Mex blend and it was awesome. Cooked it in a 1 1/2 qt casserole dish in the oven as per optional directions.

When I saw it I thought it was weird that there was actually a recipe for refried beans but when I tried it I understood why. I would definitly make this again!

Rated 5 out of 5 by from Fast, simple, and yummy! Fast, simple, and yummy! I used 1/2 cup scallions, however, and cooked about half of the tomato/scallion mixture with it while it heated in the microwave to get the oniony flavor more through it. Garlic powder is also great with this!

I used vegetarian refried beans and with all the extras, they tasted wonderful. It was a bonus knowing I was eating healthier. My tomato- hating husband even ate the tomatoes.
