  • Heat oven to 350ºF.
  • Place rhubarb in 13x9-inch baking dish sprayed with cooking spray; sprinkle with sugar, then dry gelatin mix.
  • Beat cake mix, water and butter with whisk until blended; pour over rhubarb. Spread to completely cover rhubarb.
  • Bake 45 min. or until golden brown. Serve warm topped with COOL WHIP.

Use 1 pkg. (3 oz.) JELL-O SIMPLY GOOD Strawberry Flavor Gelatin.


Prepare using a yellow cake mix.

Special Extra

Top each serving with a dash of ground cinnamon or ginger.

My original recipe didn't state to combine the cake mix with water & butter - it's an actual 'dump' cake ... you put one layer over the next and bake it. I've found this recipe to be a great use for frozen (thawed) rhubarb, reserving the water that the rhubarb leaks out as it thaws to use over the cake mix. So good!!!!!!

I used crushed pineapple with rhubarb and after it was cooked, I cooled the cake for about 10 minutes, then flipped it over, for an upside down cake. The red of the jello gave it a beautiful color. My family loved it, I have given it out to friends and family. I will be making this cake again.

I chose this recipe because I had to use it or lose it and wanted something simple and not pie. I was a tiny bit short once I had it all cut up so I added in some fresh blueberries I had on hand - sprinkling evenly on top of the rhubarb layer. I highly recommend adding them - and I will add even more next time! This is so delish with the whipped topping - Ice cream would be great too!

Rated 5 out of 5 by from easy and tender Made 1/2 recipe in a 8x8 pan using a yellow jiffy cake mix and dividing a box of jello in half. It lasted several days & just the right amount for the two of us. Cake was tender, rhubarb just sweet enough and topped with cream super good.

I may try it with raspberry jello next time. I mixed the sugar and jello together before sprinkling over the rhubarb and it was fine.
