  • Heat oven to 350ºF.
  • Place rhubarb in 13x9-inch baking dish; sprinkle with sugar, then dry gelatin mix.
  • Beat cake mix, water and butter with whisk until blended; pour over rhubarb. Spread to completely cover rhubarb.
  • Bake 45 min. or until golden brown. Serve warm topped with COOL WHIP.

Substitute

Prepare using a yellow cake mix.

Special Extra

Top each serving with a dash of ground cinnamon or ginger.

Variation

Rated 5 out of 5 by from If you like Rhubarb, you MUST try this!!! I've been making this recipe for several years and it's always YUMMY!!! My original recipe didn't state to combine the cake mix with water & butter - it's an actual 'dump' cake ... you put one layer over the next and bake it. I've found this recipe to be a great use for frozen (thawed) rhubarb, reserving the water that the rhubarb leaks out as it thaws to use over the cake mix. So good!!!!!!

I used crushed pineapple with rhubarb and after it was cooked, I cooled the cake for about 10 minutes, then flipped it over, for an upside down cake. The red of the jello gave it a beautiful color. My family loved it, I have given it out to friends and family. I will be making this cake again.

I may try it with raspberry jello next time. I mixed the sugar and jello together before sprinkling over the rhubarb and it was fine.
