  • Heat oven to 350ºF.
  • Place rhubarb in 13x9-inch baking dish sprayed with cooking spray; sprinkle with sugar, then dry gelatin mix.
  • Beat cake mix, water and butter with whisk until blended; pour over rhubarb. Spread to completely cover rhubarb.
  • Bake 45 min. or until golden brown. Serve warm topped with COOL WHIP.

Substitute

Use 1 pkg. (3 oz.) JELL-O SIMPLY GOOD Strawberry Flavor Gelatin.

Special Extra

Top each serving with a dash of ground cinnamon or ginger.

Rated 5 out of 5 by from If you like Rhubarb, you MUST try this!!! I've been making this recipe for several years and it's always YUMMY!!! My original recipe didn't state to combine the cake mix with water & butter - it's an actual 'dump' cake ... you put one layer over the next and bake it. I've found this recipe to be a great use for frozen (thawed) rhubarb, reserving the water that the rhubarb leaks out as it thaws to use over the cake mix. So good!!!!!!

I used crushed pineapple with rhubarb and after it was cooked, I cooled the cake for about 10 minutes, then flipped it over, for an upside down cake. The red of the jello gave it a beautiful color. My family loved it, I have given it out to friends and family. I will be making this cake again.

Rated 5 out of 5 by from easy and tender Made 1/2 recipe in a 8x8 pan using a yellow jiffy cake mix and dividing a box of jello in half. It lasted several days & just the right amount for the two of us. Cake was tender, rhubarb just sweet enough and topped with cream super good.

Rated 5 out of 5 by from tasty Made this for friends with rhubarb from my garden. It was very good and the right amount of sweetness. Will definitely make this again. I may try it with raspberry jello next time. I mixed the sugar and jello together before sprinkling over the rhubarb and it was fine.

Rated 5 out of 5 by from Super easy and great tasting dessert I made this today and it' turned out better than I expected! I've never made anything with rhubarb. I chose this recipe because I had to use it or lose it and wanted something simple and not pie. I was a tiny bit short once I had it all cut up so I added in some fresh blueberries I had on hand - sprinkling evenly on top of the rhubarb layer. I highly recommend adding them - and I will add even more next time! This is so delish with the whipped topping - Ice cream would be great too!
