  • Preheat oven to 350°F. Prepare rice as directed on package, substituting chicken broth for the water. Place cooked rice in large mixing bowl; cool slightly. Stir in remaining ingredients until well blended.
  • Spoon mixture evenly into 8 greased muffin cups.
  • Bake 25 min. or until lightly browned.

Rated 5 out of 5 by from TWO THUMBS UP! TWO THUMBS UP!!!! This recipe and also the Mini Meatloaf Recipe sounded so good and easy when I read the magazine. I immediately went and got the rest of the ingredients I din't have on hand (not many). Both were so easy to make and my family really enjoyed the change of pace. I work full time 40+ hours a week and still made this for an evening meal. Leftovers heat up well in the microwave also.

Rated 5 out of 5 by from These were delicious! These were delicious! I made these with the mini meatloaf also and the family loved them! They were "finger foods" and would be a great idea for movie night. I would recommend using spray Pam (or similar) though, they were difficult getting out. I think I will also try using cheddar cheese with them next time.

Rated 3 out of 5 by from I thought this recipe was simple and quick to make. I thought this recipe was simple and quick to make. It was a little bland so the next time I make it, I will add Garlic & Herb or Italian seasoning. Will also try cheddar cheese and chopped asparagus.
